WATERMELON SALAD WITH MINT

Sweet Juicy watermelon with cooling mint is makes great dish for a summer day. Watermelon salad with mint is cooling and packed with nutrients. All mints are rich in minerals and vitamins. Peppermint contains magnesium, phosphorus, calcium, iron, niacin, potassium, sodium, selenium, riboflavin, thiamine, niacin, vitamins A and C, and protein. Watermelon is a delicious way to stay hydrated and it contains antioxidants, vitamins A and C, and lycopene which may benefit heart health.

This is a super easy, quick salad. It can be served with or without the blueberries, but adding the blueberries gives a nice red, white and blue dish to take to a celebration.

I like the salad best served on a bed of mixed greens. Sometimes I add some cooked farro to the salad. You could also add cooked pasta if you want to.

HINTS

The watermelon will weep over time. Either serve the salad within a few hours of making it or just drain off the extra juice it makes.

Watermelon Salad With Mint

This refreshing salad is a summer treat. Serve as is or pile it on a bowl of greens.

Total Time 15 minutes
Servings 4

Ingredients
  

For The Dressing (make the dressing first so the flavors have time to blend)

  • 2 TBS Olive Oil extra virgin
  • 2 TBS Lime Juice
  • 2 tsp Honey or Sugar
  • 1/2 tsp Good Quality Salt

For The Salad

  • 6 Cups Watermelon cubed or balled
  • 1/2 small Red Onion sliced
  • 1/3 Cup Roughly Chopped Fresh Mint peppermint, spearmint or any other mint
  • 1 Cup Fetta Cheese
  • 2 Cups Fresh Blueberries Optional, but it makes a lovely red, white and blue salad

Instructions
 

  • Combine the olive oil, lime juice, honey and salt and mix well until the honey and salt are dissolved
  • Set aside the dressing
  • In a large bowl mix all the salad ingredients
  • Pour dressing over the salad and gently mix
  • Adjust seasonings to taste
  • Serve soon after mixing. Watermelon contains a lot of juice. Drain off some of the juice if needed

Notes

If you want to bulk this salad up add some cooked farro, barley or pasta.  Start with a layer of greens, then mix the grain or pasta into the salad and you have a hearty dish.
