- 2 TBS Lime Juice
- 2 tsp Honey or Sugar
- 1/2 tsp Good Quality Salt
For The Salad
- 6 Cups Watermelon cubed or balled

- 1 Cup Fetta Cheese

Set aside the dressing
In a large bowl mix all the salad ingredients
Pour dressing over the salad and gently mix
Adjust seasonings to taste
Serve soon after mixing. Watermelon contains a lot of juice. Drain off some of the juice if needed
All mints are rich in minerals and vitamins. Peppermint contains magnesium, phosphorus, calcium, iron, niacin, potassium, sodium, selenium, riboflavin, thiamine, niacin, vitamins A and C, and protein.
If you want to bulk this salad up add some cooked farro, barley or pasta. Start with a layer of greens, then mix the grain or pasta into the salad and you have a hearty dish.
