I don’t know about you but I really, really like Asian cuisine. I love the brightly colored vegetables, the savory aroma and, of course, the salty, oily undertones.

Why eat out when the best fried rice recipe is this easy?

There are very few foods I don’t make at home. When I choose to eat out I want something I can’t really make well in my own kitchen or something that would make a mess. Fried rice is so quick and easy that I make it often. This particular recipe is good enough for company. So save some money and dine at home.

If you are tired and want a one-pan meal the family will love, this is it. Feel free to add chicken, shrimp, beef or whatever protein you want or even just add more eggs.

Adaptable for Vegan

Use a vegan egg substitute to adapt the recipe for plant-based diets.

I first tried making fried rice at home a couple decades or so ago. It was pretty bad. The rice stuck together in a mushy clump and I didn’t have sesame oil so the whole “Asian” flavor was missing. That fried rice was something we ate but did not crave. I am not one to give up and eventually I discovered a few tricks to making the best fried rice ever.

The best fried rice recipes use left-over rice. Hint: This is what keeps the fried rice from turning out like cold over-cooked oatmeal, all soft and stuck together. The easiest thing to do is to make extra rice when you have a meal and store the left-over plain rice in the refrigerator for a few days or even freeze it. Having a few meal-sized containers of rice in the freezer can come in very handy. You want the rice to be loose and slightly dry before using it in the recipe. In a pinch, I have made the rice and then tossed it into the freezer to cool quickly. It’s not the best option but it can work.

This recipe uses a bag of frozen peas and carrots. I keep a couple in the freezer. If you want to use your own home-grown vegetables that’s great! Either use what you have in the freezer or put the fresh chopped carrots and the peas in with the onions when you start to cook them to make sure they are done.

The vegetable possibilities are limited only by your imagination and supply.

This is a great way to use up scraps from the refrigerator. I often add some peppers, but most vegetables would work.

Adding Meat

Have a left over pork chop or some chicken? Anything that’s not enough to feed everyone. Add it in here! The small amount of meat along with the eggs will give protein and it makes a one pan meal.

Seriously, the best fried rice recipe I ever made is easy. It’s good enough for company and makes a frugal one pan meal when you need it.

Just keep some left over rice in the fridge or freezer and you can throw this together in about half an hour.

    The Best Easy Fried Rice

    This fried rice recipe is ready in minutes and takes like take-out
    Prep Time 15 minutes
    Cook Time 20 minutes
    Cuisine Chinese
    Servings 4 people

    Ingredients
      

    • 4 cups Rice Cooked and cooled. Left-over/ day old is best
    • 2-3 TBS Oil for cooking Peanut, coconut or olive: change up the oil to taste
    • 1 small Onion roughly chopped White for mild or any color
    • 1 stalk Celery chopped
    • 1/2 Bag Frozen Peas and Carrots A couple cups. Add more to taste
    • 2-4 Eggs lightly beaten Or vegan egg substitute
    • 2-3 TBS Soy Sauce
    • 2+ TBS Sesame Oil
    • 2 TBS Green Onions chopped very optional

    Instructions
     

    • Preheat a large skillet or wok to medium/high
    • Add cooking oil and Onions. Cook until the onions are just slightly tender then reduce heat to medium and add celery and other vegetables (feel free to add others like peppers or whatever you want). Cook until barely done and transfer to a bowl.
    • Add the beaten eggs to the pan and stir until cooked.
    • Move eggs to the vegetables
    • Add the rice, soy sauce and sesame oil to the pan and stir well
    • Toss everything else in with the rice and cook until hot.
    • Adjust to taste for soy sauce, sesame oil
    • Transfer to a serving bowl and sprinkle with chopped green onions if desired.
