The Best Easy Fried Rice

This fried rice recipe is ready in minutes and takes like take-out

Ingredients
  

  • 4 cups Rice Cooked and cooled. Left-over/ day old is best
  • 2-3 TBS Oil for cooking Peanut, coconut or olive: change up the oil to taste
  • 1 small Onion roughly chopped White for mild or any color
  • 1 stalk Celery chopped
  • 1/2 Bag Frozen Peas and Carrots A couple cups. Add more to taste
  • 2-4 Eggs lightly beaten Or vegan egg substitute
  • 2-3 TBS Soy Sauce
  • 2+ TBS Sesame Oil
  • 2 TBS Green Onions chopped very optional

Instructions
 

  • Preheat a large skillet or wok to medium/high
  • Add cooking oil and Onions. Cook until the onions are just slightly tender then reduce heat to medium and add celery and other vegetables (feel free to add others like peppers or whatever you want). Cook until barely done and transfer to a bowl.
  • Add the beaten eggs to the pan and stir until cooked.
  • Move eggs to the vegetables
  • Add the rice, soy sauce and sesame oil to the pan and stir well
  • Toss everything else in with the rice and cook until hot.
  • Adjust to taste for soy sauce, sesame oil
  • Transfer to a serving bowl and sprinkle with chopped green onions if desired.
